A very discreet touch of wood frames a notably complex and densely aromatic nose of white flowers, wet stone and sea breeze nuances that introduces rich and generous middle weight flavors that manage to retain a fine sense of focus and balance on the punchy, long, linear and lemon-inflected finish. Burghound 90 (Domaine Jean-Paul & Benoit Droin Chablis Vaillons) (from the second bottling, in January of 2012): Bright straw-yellow. Reticent aromas of citrus fruit and saline oyster shell minerality. Begins juicy and penetrating, with a distinctly taut quality to the citrus and steely mineral flavors, then shows a creamier aspect toward the back. Very fresh Vaillons with a long, spicy finish.
